Cheese Tapioca Souffle'
1 cp grated cheese
1 cp milk, scalded
salt and pepper
3 tbsp quick cooking tapioca
1 - Cook tapioca in milk until clear.
2 - Add well-beaten egg yolks, cheese, and seasonings to taste.
3 - Fold in stiffly beaten egg whites.
4 - Pour into well-oiled casserole.
5 - Set in pan of warm water.
6 - Bake in moderate oven 375 degrees F.) 20 minutes, or until and inserted knife comes out clean.
