Cheese Rice Cakes
2 cps boiled rice
1 tbsp melted butter or butter substitute
1 cp grated cheese
slt and pepper
1 egg white, slightly beaten
1 - Combine rice, cheese and butter or butter substitute.
2 - Add 1/4 cp chopped pimiento if desired.
3 - Season to taste.
4 - Form into cakes.
5 - Brush lightly with white of egg.
6 - Place on well-oiled baking sheet.
7 - Bake in moderate oven (375 degrees F.) 10-15 minutes.
8 - Serve hot with any favorite sauce.
