1 cp powdered sugar
1 cp almond paste
3 egg whites
1/2 tsp salt
1 - Beat egg whites until stiff.
2 - Mix thoroughly with almond paste and salt.
3 - Add sugar and beat thoroughly.
4 - Drop by teaspoonfuls onto slightly-oiled baking nsheet.
5 - Bake in moderate oven (375 degrees F.) about 15 minutes.
6 - Remove from oven.
7 - Set baking sheet on a wet towel for a few minutes.
8 - Remove macaroons with a wide spatula.
9 - The almond paste may be made by pounding 2 1/2 cps shelled blanched almonds until a paste is formed.
