Eggs Scrambled with Green Peppers
2 medium green peppers
1 cp well seasoned soup stock
salt and pepper
4 tbsp butter or butter substitute
1 - Remove seeds and membrane from peppers.
2 - Parboil 5 minutes.
3 - Mince.
4 - Beat eggs slightly.
5 - Season to taste.
6 - Add soup stock
7 - Melt butter or butter substitute in upper part of double boiler.
8 - Add egg mixture, stirring constantly.
9 - As eggs begin to thicken add minced peppers.
10 - Continue cooking, stirring constantly until whites of eggs are set.
11 - If desired, 2 bouillon cubes may be dissolved in 1 cp boiling water and substituted for soup stock.
