Baked Eggs on Spinach
2 1/2 cps cooked spinach
1/2 cp grated cheese
1 cp bread crumbs
2 tbsp vinegar
salt and pepper
butter or butter substitute
1 - Drain and chop spinach.
2 - Add cheese, salt, bread crumbs and vinegar.
3 - Mix by tossing lightly with 2 forks.
4 - Line individual molds with mixture.
5 - Break an egg in the center of each.
6 - Season with salt, pepper, and butter or butter substitute
7 - Place molds in pan of warm water.
8 - Bake in moderate oven (375 degrees F.) until eggs are firm.
9 - Serve at once
