Baked Eggs in Rice
3 cps cooked rice
2 cps milk
4 tbsp butter
4 tbsp flour
2 tsp salt
1 cp grated cheese
paprika and pepper
1/2 cp soft cheese
1 - Make a sauce of the milk, butter, flour, salt, and cheese.
2 - Cook in double boiler until smooth and thick.
3 - Add 1/2 the cheese sauce to the rice.
4 - Mix lightly, using fork.
5 - Line well-oiled individual baking dishes with rice mixture.
6 - Break 1 egg into each.
7 - Season with salt, pepper and paprika.
8 - Place in pan of warm water.
9 - Bake in moderate oven (375 degrees F.) until white of egg is firm.
10 - Serve with cheese sauce.
