3/4 tsp salt
1/4 cp water
1/8 tsp pepper
1/2 tbsp butter or butter substitute
1 - Beat egg yolks until thick and lemon colored.
2 - Add seasonings.
3 - Beat egg whites until foamy.
4 - Add water and continue beating until stiff.
5 - Carefully fold into first mixture.
6 - Pour into hot frying pan containing butter or butter substitute.
7 - Cook over low fire until well puffed, slightly brown on bottom and firm to the touch.
8 - Cook under a low broiler flame 2-3 minutes.
9 - After omelet is well puffed and slightly brown on the bottom, the cooking process may be completed in
a moderate oven (375 degrees .)
10 - Crease omelet.
11 - Fold.
Serve at once.
If desired, 1/4 cp finely chopped ham or grated cheese, or 2 tbsp tart jelly may be
placed on 1/2 the omelet just before it is served.
