Salmon Croquettes II
1 3/4 cps salmon
few grains cayenne
1 cp thick white sauce 1 tsp lemon juice
1 egg, slightly beaten
1 - Combine shite sauce, salmon, and lemon juice.
2 - Season to taste.
3 - Spread on plate to cool
4 - Shape in balls, cones or cylkinders.
5 - Dip in crumbs, egg, and crumbs.
6 - Fry in deep fat (375 degrees F.) until golden brown.
7 - Drain on crumpled absorbent paper.
8 - Serve at once.
