Salmon Balls II
2 cps cooked rice
1 cp salmon
salt and pepper
1/4 cp melted butter or butter substitute
2 eggs, well beaten
1 - Flake salmon.
2 - Remove bones.
3 - Add rice, butter or butter substitute, and eggs.
4 - Season to taste.
5 - Mix lightly with 2 forks.
6 - Form in balls.
7 - Fry in deep fat (375 degrees F.) until brown.
8 - Drain on crumpled absorbent paper.
9 - little chopped sweet pepper, 1 tbsp pickle, oir a littl lemon juice makes delicious variations.
