Salmon Vegetable Loaf
1 cp salmon
2 cps hot mashed potatoes
3/4 cp cooked beans
1/2 cp diced onions
salt and pepper
2 egg whites
2 tbsp butter or butter substitute
1 - Flake salmon.
2 - Remove bones.
3 - Combine salmon, potatoes, beans, onions, and melted butter or butter substitute.
4 - Season to taste.
5 - Mix until well blended.
6 - Fold in stiffly beaten egg whites.
7 - Pour into well-oiled baking dish.
8 - Bake in moderate oven (400 degrees F.) until puffy and brown.
9 - Serve at once with sour pickles and tartare or tomato sauce.
