Dress duck. Wash carefully. Cut in pieces for serving. Rub with
salt and pepper. Fry 1/2 cp diced salt pork until crisp and brown. Add
1/4 cp sliced carrots, 2 tbsp chopped onion, and 1 bay leaf to fat.
Brown slightly. Add duck. Brown well. Add 1/4 cp boiling water.
Cover. Simmer slowly, basting frequently, until duck is tender.
