2 cps sugar
3/4 cp water
2 egg whites, stiffly beaten
1/4 tsp salt
2 tbsp finely minced preserved or candied ginger
1 tsp lemon flavoring
1 - Combine sugar, salt, and water.
2 - Boil to soft ball stage(236 degrees F.)
3 - Pour slowly, stirring constantly, onto egg whites.
4 - Add ginger and flavoring.
5 - Continue beating until thick and creamy.
