Beef juice may be prepared by pressing the juice from slightly
warmed diced beef. Finely chopped raw beef in the proportion of 1/2 lb to 2 tbsp of water, may be placed in the upper part of a
double boiler and kept over hot water for 2 hours. If a double boiler
is not available pack meat closely inn a glass jar and place on rack inBeef Juice
pan of hot water. Keep meat at a temperature of 150 degrees F. the entire 2
hours. Strain carefully.
