7 or 8 medium potatoes
1 tsp salt
1 egg, well beaten
1 tbsp butter
1/2 cp milk
12 small cooked carrots
1 cp medium white sauce
2 cps cooked diced veal
1 - Pare and boil potatoes until tender.
2 - Drain.
3 - Mash.
4 - Add milk, egg, salt, and butter.
5 - Whip until smooth and fluffy.
6 - Form a circular border of the mashed potatoes on a well-oiled baking sheet, using a pastry tube or cookie press.
7 - Brown in hot oven (450 degrees F.) .
8 - Transfer by sections to large platter.
9 - Fill the center of the kold with the veal which has been combined with the well-seasoned white sauce and thoroughly heated.
10 - Garnish with paprika, buttered carrots, and parsley
