Breaded Pork Chops
ix thin pork chops. Sprinkle with salt and pepper. Roll in bread
crumbs. Dip in slightly beaten, seasoned egg which has been diluted
with 2 tbsp water. Roll in crumbs. Brown slowly in hot cooking
fat. Remove from frying pan. Make a highly seasoned, slightly thick-
ened sauce in the pan in which the chops were browned. Place cooked
chops in sauce. Cover. Simmer 1 hour. Serve with sauce. If desired,
chopped green pepper, cooked tomato, and chopped onion may be added.
