Green Tomato Mince Meat
1 peck green tomatoes
1 qt sliced apples, fresh or dried
1 lb seedless raisins
1 lb suet, chopped
cinnamon, nutmeg, and cloves
2 1/2 lbs brown sugar
1 - Wash tomatoes.
2 - Cut in small pieces.
3 - Sprinkle with salt.
4 - Let stand overnight.
5 - Drain.
6 - Add sufficient water to prevent sticking
7 - Cook 30 minutes, stirring frequently.
8 - Add lemon juice, grated rind 1 lemon, and white of 1 lemon cut in small pieces..
9 - Add apples, suet, raisins, and sugar.
10 - Add spices to taste and a few grains salt.
11 - Simmer slowly, stirring frequently, until tomatoes and apples are tender and flavors are blended.
12 - Pack in freshly sterilized jars.
13 - Seal.
