1 cp sugar
6 tbsp flour
1/4 tsp salt
grated rind 1 orange
3 tbsp sugar
1 cp orange juice
juice 1/2 lemon
2 tbsp butter or butter substitute
1 - Combine flour, 1 cp sugar, salt and grated rind.
2 - Add fruit juices.
3 - Cook over hot water until thick ans smooth.
4 - Stir constantly to prevent lumping.
5 - Add butter or butter substitute and slightly beaten egg yolks.
6 - Cook 2 minutes.
7 - Pour into baked pastry shell.
8 - Cover with meringe made of egg whites and 3 tbsp sugar.
9 - Bake in slow oven (325 degrees F.) 20 minutes.
10 - If desired, omit meringue, cool pie and serve with slightly sweetened whipped cream.
