2 cps dried apricots
3/4 cp sugar
2 tbsp cream
1/4 cp butter
1 - Wash apricots.
2 - Cover with water.
3 - Simmer 40 m inutes, or until tender and water is evaporated.
4 - Beat until smooth.
5 - Cool.
6 - Cream butter and sugar.
7 - Add well beaten egg yolks, cream, and apricots.
8 - Fold in stiffly beaten dgg whites.
9 - Pour into baked pastry shell.
10 - Bake in moderate oven (400 degrees F.) until firm.
11 - If desired, dried peaches, prunes, or apples may be substituted for apricots.
