2 cps sugar
1/2 cp water
1/8 tsp cream of tartar
1 - Combine sugar and cream or tartar.
2 - Add water.
3 - Stir until sugar is dissolved.
4 - Cover pan and boil 5 minutes, allowing steam to dissolve any grains of sugar on sides of pan.
5 - Uncover and boil without stirring to soft ball stage(234-238 degrees F.)
6 - Wipe all crystals from the sides of the pan with a damp cloth.
7 - Pour into shallow pan, plate, or onto a marble slab which has been rinsed with cold water.
8 - Cool to room temperature.
9 - Beat only until stiff enough to knead.
10 - Knead until smooth.
11 - Place in bowl.
12 - Cover with a damp cloth or waxed paper.
13 - Allow to stand 24 hhjours before using.
14 - If desired, milk may be substituted for the water.
