Winter Vegetable Soup
2 tbsp butter
1 tsp sugar
1 cp chopped cabbage
1 cp diced carrot
1/2 cp diced turnip
1 green pepper, minced
1 onion, minced
1 pt. canned tomato
1 qt boiling water
2 tsp salt
1/4 tsp pepper
1 - Melt the butter; and add the sugar. When browned, add the cabbage
and other raw vegetables. Cook for 3 minutes.
2 - Add the tomatoes and waqter(or substitute a qt of home-made soup stock,
or a can of bouillon and an equal quantity of water.)
3 - Add the seasonings and cook gently for 30 minutes.
4 - Drop tiny dumplings on the mixture, cover closely, and cook for 10 minutes longer.
Serve with plain or with grated cheese.
