Quick Roumanian Potato Soup
4 medium-sized potatoes
1 qt. soup stock
1 medium-sized onion, minced
1/2 tsp salt
a few grains pepper
4 tbsp grated American cheese
1 - Peel and grate the potatoes; and combine with the soup stock
2 - Add the onion, salt and pepper; and cook together for twenty minutes.
3 - Serve in old-fashioned soup plates or soup bowls.
Note: Canned consomme may be substitue=ted for the soup stock.
