Cream of Cucumber Soup
2 large cucumbers
1/2 tsp sugar
2 tbsp butter
1 can consumme
1 pt milk
few grains nutmeg
1/2 cp top cream
1 - Peel and chop the cucumbers.
2 - Add the sugar and fry in the butter for 10 minutes.
3 - Stir in the flour; and gradually add the consumme and the milk.
4 - When boiling rapicdly rub through a sieve.
5 - Season with salt and pepper to taste and add a trace of nutmeg..
6 - Beat the egg light; add the top cream; stir into the soup.
7 - Bring to the boiling point stirring constantly; and serve at once.
