Old Fashioned Potato Chowder
2 oz. salt pork
1 large onion, chopped fine
1/2 cp diced celery
2 cps peeled diced potatoes
1 qt milk
1 tsp salt
1/8 tsp pepper
1 - Cut the salt pork in a small dice; and fry until crisp and golden brown.
2 - Add the onion and saute' until yellow.
3 - Transfer to a kettle; add the celery and potato and 3 cps of boiling water.
4 - Simmer until the vegetables are nearly tender, about 30 minutes.
5 - Then add the milk; season; cover; and cook slowly 20 minutes longer.
6 - Serve in bowls with crackers.
