Lima Bean Stew
2 tbsp butter
2 small onions, minced
1/2 lb dried lima beans
3 cps boiling water
1 1/2 tsp salt
3 potatoes, peeled and diced
1/4 tsp pepper
3 cps milk
1/4 cp cracker crumbs
1 tbsp minced parsley
1 - Melt the butter; add the onions; and pan fry 2 minutes.
2 - Then add the lima beans, which should have been soaked
overnight,the water, and the salt; and simmer until beans are
almost tender, about 1 1/2 hrs.
3 - Then add water as necessary to keep the original amount.
4 - Add the potatoes and pepper; and cook 30 minutes more.
5 - Pour in the milk; bring to the boiling point and thicken
with cracker crumbs.
6 - Serve sprinkled with parsley and accompanied by the pilot crackers.
