Cracked Wheat Muffins
4 tbsp shortening
2 tbsp sugar
1 tsp salt
1 1/2 cps flour
3 1/2 tsp baking powder
1 cp cooked cracked wheat
1 cp milk
1 - Cream the shortening, sugar, and salt. Add the eggs, well beaten.
2 - Sift the flour and baking powder and mix in the cracked wheat thoroughly.
3 - Add this alternately with the milk to the first mixture.
4 - Transfer to sa=mall oiled muffin pans.
5 - Bake for 20-25 minutes in a hot (400 degrees) oven.
