2 cps flour
3 tsp baking powder
3/4 tsp salt
1 tbsp sugar
1 2/3 cps milk
2 tbsp melted shortening
1 - Sift the dry ingredients. Beat the egg light, add the milk.
2 - Pour slowly into the first mixture beating continuously, then add the shortening.
3 - Heat the griddle and lightly oil it with vegetable fat.
4 - Transfer the pancake mixture to it by the tablespoonfuls.
5 - Cook the pancakes gently, turning them when they are full of bubbles andn brown
on the bottom, then brown the other side.
6 - They should be turned only once. Serve with syrup, honey, or melted jelly.
