1 cp cornmeal
3/4 cp boiling water
1/3 cp flour
2/3 tsp salt
1 egg, beaten
1/2 cp milk
1 tbsp molasses
2 tsp baking powder
1 tbsp melted shortening
1 - Pour the boiling water over the cornmeal; and let it stand 5 minutes.
2 - Add the flour and salt; mix until free from lumps.
3 - Combine the egg, milk and molasses; beat into the cornmeal mixture.
4 - Add the baking powder and shortening; and beat until blended.
5 - Drop by tablespoonfuls onto a hot griddle or frying pan rubbed with vegetable fat.
6 - When the pancakes are brown on the bottom and full of bubbles on the top,
turn and brown on the other side.
7 - Serve with melted jelly or syrup.
