Toasted Mushroom Sandwiches
1/2 lb. mushrooms
2 tbsp butter
2 tbsp flour
1/2 tsp salt
1/8 tsp paprika
1/2 cp top-cream
thin slices white bread
1 - Wash the mushrooms and mince both caps and stems.
2 - Fry until soft in the butter; add the flour, salt, and paprika.
3 - When smooth, add the cream and stir until the mixture thickens.
4 - Cool slightly; spread between slices of bread, sandwich fashion.
5 - Remove the crusts; cut in finger lengths; and fry to a golden brown
in additional butter.
6 - Serve hot.
