Macaroni with Cheese and Green Pepper Sauce
1/2 lb macaroni
4 tbsp butter
1 green pepper, minced
4 tbsp flour
1/2 tsp salt
A few grains of pepper
2 cps milk
1/2 cp finely chopped dairy cheese
1 - Cook the macaroni in boiling salted water until tender, then drain.
2 - Keep hot while preparing the sauce.
3 - Melt the butter, add the green pepper, and fry until the pepper is soft, but not brown.
4 - Add the flour, salt and pepper; and gradually pour in the milk.
5 - Cook and stir over moderate heat until the sauce thickens; add the cheese.
6 - Stir until the cheese melts, then pour over the macaroni and arrange on a heated platter.
