Quick Macaroni with Cheese
1 half-pound macaroni
3 tbsp butter
3 tbsp flour
3/4 tsp salt
1/4 tsp pepper
2 cps milk
1/2 lb diced full milk cheese
1 - If stick macaroni is used, break in pieces and inch in length
2 - Cook until tender in plenty of boiling water to which has been added 2 tsp of salt.
3 - In the meantime, melt the butter, and the flour, salt, and pepper and mix to a smooth paste
4 - Gradually add the milk and cook and stir until the mixture thickens.
5 - Add the cheese and continue cooking slowly until the cheese melts, stirring occasionally.
6 - Drain the macaroni, and add to the cheese sauce.
