Cheese and Spaghetti Loaf
1 1/2 tbsp butter
1 1/2 tbsp flour
1 1/2 cps milk
1 cp grated full milk cheese
3/4 tsp salt
1/8 tsp pepper
1/4 tsp paprika
1 minced pimento(optional) 4 cps cooked spaghetti, coarsely chopped 3 eggs
1 - Melt the butter; add the flour; and mix to a smooth paste.
2 - Gradually add the milk; and cook and stir until the mixture thickens.
3 - Add the cheese, seasonings and pimento; cook until the cheese melts.
4 - Add the spaghetti; beat the eggs until thick and lemon colored.
5 - Fold the eggs into the spaghetti mixture and transfer to a well
oiled mould or large bread pan.
6 - Set in a pan of water; and bake in a moderate oven (350 degrees) for 50 minutes
or until the loaf is firm.
7 - Unmould and serve plain, or with wtewed tomatoes or tomato sauce.
