Cornmeal Meat Slices
3 cps cornmeal mush
1 1/4 cps chopped ccoked ham, or corned beef
1 tsp sage
3 tbsp chopped onions
1/4 cp milk
Deep frying fat
1 - Combine the cornmeal mush and meat; and season with sage and onion.
2 - Pour into brick-shaped pan rinsed with cold water; and chill.
3 - Unmould; slice, dip in the egg beaten and diluted with the milk, then in the bread crumbs.
4 - Fry a golden brown in deep fat hot enough to brown a bit of bread in 55 seconds.
5 - Drain on crumpled paper napkins or towels and serve with or without tomato sauce.
