1 cp rice
2 tbsp butter
1/2 tsp salt
1/8 tsp pepper
1 - Wash the rice; and cook rapidly in 2 quarts of boiling water, until tender, about 25 minutes
2 - Drain, rinse with boiling hot water, place in a colander and steam over boiling water for about 10 minutes to dry out the rice.
3 - Season with butter, salt and pepper; and pack into buttered custard cups or timbale moulds to shape.
4 - Unmold and serve very hot.
