2 tbsp fat
1/3 cp minced onion
1 green pepper, minced
2 cps canned or stewed tomatoes
2 cps boiling water
1 tsp salt
1/8 tsp pepper
1 cp washed rice
1 - Melt the fat; add the raw vegetables and fry until tender.
2 - Add the tomatoes, water and seasonings and heat to the boiling point.
3 - Stir in the rice and continue to cook and stir occasionally for 20 minutes.
4 - Transfer to an oiled baking dish and bake in a hot oven, 375 degrees for 20 minutes,
or until the rice has absorbed the liquid and is flaky.
