1/2 cp diced salt pork
3 tbsp olive oil
1 large slice onion
1/3 cp chopped parsley
1/2 cp pine nuts,
1 clove garlic
1/2 tsp salt
meat of 1 small boiled chicken
1 1/2 qts chicken broth
1 cp rice
1/2 cop raisins
1 - Prepare the chicken for boiling; and cook.
2 - Drain off the broth and remove the fat from it.
3 - Shred the chicken meat.
4 - Put the salt pork and olive oil in a separate kettle.
5 - Add the onion and garlic, chopped, the parsley and pine nuts.
6 - Cook a few minutes until the onion has yellowed.
7 - Addd the chicken meat and rice and cook until the rice starts to turn yellow.
8 - Stir in a little of the hot broth; add one half tsp salt.
9 - as the fice absorbs the liquid, add more from time to time.
10 - Cook slowly an hour and a quarter, adding the raisins the last 10 minutes.
11 - Serve in bowls with plenty of Parmesan cheese.
