Puffy Cheese Puddings
1 pt milk
1 1/2 cps soft bread crumbs
1 1/4 cps grated American dairy cheese
1 tsp salt
1/8 tsp pepper
2 tbsp melted butter
1/8 tsp baking soda
1 - Scald the milk; and pour over the bread crumbs.
2 - Add the cheesxe, salt, pepper, melted butter, soda and the egg yolks slightly beaten.
3 - Fold in the egg whites, whipped stiff; and transfer to 1 large or 4 individual oiled
heat proof ramekins.
4 - Place in a shallow pan containing hot water; and bake in a moderate oven, 350 degrees
for 30 minutes or until brown on top.
