2 tbsp butter
2 tbsp flour
1/2 tsp salt
few grains paprika
1 1/2 cps milk
1 cp finely chopped full milk dairy cheese
1 cp cooked rice
1 - Melt the butter; add the flour salt, and paprika; and mix to a smooth paste
2 - Gradually add the milk, and cook and stir until the mixture thickens.
3 - Add the cheese; and continue cooking until it melts.
4 - Pour over the rice; and add the egg yolks, beaten until creamy.
5 - Fold in the egg whites, whipped stiff; and transfer to well oiled
timbale moulds or custard cups.
6 - Place in a shallow pan filled with warm water and bake in a moderate oven
350 degrees for 30 minutes or until firm and brown on top. 7 - Unmould, pour over tomato sauce; and serve.
