Poached Eggs with Cheese Sauce
1 - To poach the eggs, pour enough boiling water in a deep frying pan to half fill it.
2 - Add 1/2 tsp salt and a few drops of vinegar
3 - Break the eggs one at a time in a saucer; and slide gently into the boiling water.
4 - Cook slowly for 5 minutes, dipping the water gently over the egg yolks occasionally.
5 - Transfer by means of a slotted spoon to buttered toast and pour the cheese sauce.
6 - Garnish with minced parsley if desired.
