Shirred Swiss Eggs
2 tbsp butter
4 thin slices Swiss cheese
1/4 tsp salt
2 tbsp cream or top-milk
3 tbsp chopped Swiss cheese
dash of paprika
1 - Melt the butter in a shallow baking dish (or in individual dishes).
2 - Lay the slices of cheese on the bottom of the dish; break the eggs onto the cheese.
3 - Sprinkle with salt; pour the cream or top-milk over and strew the chopped cheese
and paprika on top.
4 - Bake in a moderate oven, 350 degrees until the whites of the eggs are set and the cheese is melted.
5 - Serve in the dish in which the cooking was done
