Panned Steak Platter, Indiana Style
1 lb round steak cut 1/2" thick, and in four pieces
1 tbsp flour
1/2 tsp salt
1/4 tsp pepper
2 tbsp savory drippings
1 tbsp minced parsley
Mashed potatoes, about 2 cps
1 1/2 cps diced cooked new carrots
1 small onion, minced
1 tbsp butter
1 - Combine the four, salt and pepper; and dust the steak with it.
2 - Melt the drippings in a heavy frying pan;p put in the steak and fry until brown on one side.
3 - Turn and brown on the other side.
4 - Add enough water to almost suberge the meat; cover and simmer 45 minutes
5 - Arrange the steak in the center of a heated platter.
6 - Pour over the gravy in the pan; a d sprinkle with minced parsley.
7 - Form the mashed potatoes into four mounds; arrange on the ends and sides of the platter.
8 - Sprinkle with the onion, browned in the butter. Place the carrots between the potato mounds.
