Braised Rolled Steak
1 1/2 lbs round steak
1 onion, chopped
6 good-sized carrots
1 tsp salt
few grains pepper
1 - Order the steak sliced and cut 1/2" thick; lay it on a board and spread over it
the bread dressing mixed with the onion.
2 - Roll up and tie with a string. Dust with salt and pepper.
3 - Brown in a heavy frying pan or iron pot, using savory drippings.
4 - Peel the carrots, quarter and place around the meat.
5 - Half cover with boiling water; put on the lid and simmer 2 hrs in a slow oven
or on top of the range.
6 - To serve, remove the string and make gravy from the liquid using 1 tbsp flour
mixed with a tbsp of cold water to each cup of meat liquor.
