1 2 lb broiler
1 - Singe, clean, and quarter the chicken, dust with salt & pepper and roll in flour.
2 - Place in a baking dish and brown in a hot oven. (425 degrees F.
3 - Reduce the heat to 400 degrees, add one cup of water, cover and bake slowly
until the chicken is tender, about 35 minutes.
4 - Baste occasionally during the cooking with some drippings.
5 - Serve on toast with a garnish of crisp bacon and whitem sauce.
6 - Accompany with corn fritters.
