1 3 lb spring chicken
1 1/2 tbsp flour
3/4 tsp salt
1/4 tsp pepper
1 - Singe, clean, and quarter the chicken; combine the flour, salt and pepper.
2 - Dust the chicken with the mixture.
3 - Melt and heat enough drippings or other fat to comfortably cover the bottom of a large heavy frying pan
4 - Put in the chicken and fry over moderate heat until brown on one side.
5 - Turn and cook until brown on the other side.
6 - Reduce the heat and continue cooking for about 30 minutes, or until the chicken is tender.
7 - Transfer to a heated platter; pour over Creole Sauce and surroung with rice timbales.
