Chicken Pot Pie
(1) 3 lb chicken
1/2 cp diced salt pork
1 qt boiling water
1/4 cp flour
1/2 cp evaporated milk
1 1/2 tsp salt
1/8 tsp pepper
baking powder biscuit cough
1 - Clean and cut up the chicken as for fricasee.
2 - Fry the pork until light brown in a heavy kettle.
3 - Add the chicken, and cook until browned.
4 - Season, pour in the water; cover closely and simmer tender.
5 - Mix the flour and evaporated milk; stir into the boiling chicken and cook 3 minutes.
6 - Line an oiled casserole or heavy baking dish with strips of baking powder biscuit dough rolled 1/2" thick.
7 - Pour in the chicken mixture; cover with little biscuits cut from the dough.; set very close together.
8 - Brush with milk; and bake until light brown - about 35 minutes - in a hot oven at 400 degrees.
