Fricasee of Duck on Biscuits
(1) 3 lb duck
2 tsp salt
1/8 tsp pepper
2 tbsp butter
1 onion, chopped
1 cp minced celery
Bit of bay leaf
1 - Clean and disjoint the duck
2 - Dust with salt and pepper; roll in flour; and brown in the butter.
3 - Add the onions and the celery; and pan fry 3 minutes.
4 - Add the bay leaf and remaining seasonings.
5 - Barely cover with boiling water; and simmer, closely covered until the duck is tender.
6 - If necessary, thicken the gravy more with 1 1/2 tbsp flour mixed with a little cold water.
7 - Serve on toast or split baking powder biscuits.
