Roasted Stuffed Loin of Pork
2 lbs loin of pork
4 medium sized sweet potatoes
1 - Stuff the rib side of the loin with the dressing; and tie with a string;
2 - Place stuffing side down in a roasting pan rubbed with savory fat.
3 - Rub the pork with salt, pepper, and flour combined.
4 - Roast in a very hot oven, 450 degrees F. for 15 minutes; then reduce the heat
to 400 degrees F. and continue cooking for one hour.
5 - When the heat is reduced, add the sweet potatoes which should be peeled; and
cook with the meat, basting and turning the potatoes frequently so they will brown all over.
