Sliced Spiced Ham
1 small half ham
2 stalks celery
1/4 cp pickle spice
1 - Scrub the ham thoroughly; place skin side down in a large kettle; cover with
cold water and heat to the boiling point.
2 - Drain and discard the water; cover with fresh cold water.
3 - Add the onion, celery, and pickle spice; heat to the boiling point
and simmer until the ham is tender, allowing 20 minutes to the lb. 4 - Cool the ham in the water in which it was cooked.
5 - Skin, chill, and cut in thin slices.
