Breaded Pork Tenderloin
1 lb fresh pork tenderloin
fine cracker crumbs
1 - Order the tenderloin cut in 1/2" slices.
2 - Beat with a potato masher to form flat cutlets
3 - Dust with salt, pepper, and flour, and dip into the egg, slightly beaten.
4 - Roll in cracker crumbs and fry over low heat for 15 minutes or until the cutlets are brown and tender.
5 - Serve plain or with horseradish or chili sauce.
