Baked Ham Glace'
1 medium sized ham
1/4 tsp baking soda
1 cp minced celery
1 onion, minced
1 1/2cps diced carrots
1 pint Burgundy wine
1 - Scrub the ham in warm sater to which 1/4 tsp of baking soda has been added.
2 - Rinse and place in a kettle of boiling water.
3 - Add the vegetables and spices; coer and swimmer until the ham is tender, about 2 1/2 hrs.
4 - Remove from the water; pare off the skin; cover the fat side with brown sugar and brush
over with beaten egg.
5 - Bakem in a moderately hot oven, 400 degrees F. until the sugar is melted, basting every
few minutes with the wine.
6 - When done the ham should be deliciously browned.
