Broiled Chops with Vegetables
4 good-sized pork or veal chops
4 good-sized slices eggplant
4 sliced white or sweet potaqtoes.
4 slices bacon
1 - Dust the chops with salt and pepper and place on a good sized steel boiler rack.
2 - Beside them place the eggplant sliced 1/2" thick, but not peeled, also dusted with salt and pepper.
3 - Put a slice of bacon on each slice of eggplant.
4 - The potatoes should be peeled and cut lengthwise in 1/4" slices and placed wherever convenient
on the broiler.
5 - Broil for 15 mintues.
6 - Turn the chops and vegetables only once, when browned on top.
